Classic Pound Cake & a L-O-V-E-ly Giveaway!

Not only is today Chinese/Lunar New Year's Eve, it's also the first of several giveaways here at sweets by sillianah!  [I promise I won't get mad if you scroll straight to the bottom for the giveaway] Originally, I had planned to share the Deep Chocolate Pound Cake by Bon Appetit Desserts, but when I took it out of the oven, it definitely was not the "deep chocolate" color I was looking for... it looked almost gingerbread like - I'm not sure if it was the cocoa powder I used or because it was mixed with honey - either way, it was just blah and not a pretty color to photograph for today's special occasion.

So, I glanced over at the classic pound cake recipe on the same page, and decided that I would have to improvise and somehow make this plain yellow cake fancy and special...

This was my first time making pound cake as I've always avoided it because of the all the eggs and butter involved, but this recipe I could handle.  Although the cake itself is nothing mind-blowing, plate it up with some fresh whipped cream and Nerds (yes, the candy... if I were not such a wimp, I would've totally gone out in this crazy weather and picked up some fresh berries to top off this plate) and there you have it; a special dessert for Valentine's Day, Chinese New Year or a lovely giveaway! Classic Pound Cake 
from Bon Appetit Desserts

Yields: 8-10 servings

1 3/4 cups unbleached all purpose flour
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups sugar
3 large eggs
1 1/4 teaspoons vanilla extract
1/4 cup whole milk

Preheat oven to 350 degrees F.  Butter & flour 9x5x3-inch metal loaf pan.

Whisk flour and salt in medium bowl to blend.  Using electric mixer, beat butter in large bowl until fluffy.  Gradually add sugar, beating until blended well.  Beat in eggs 1 at a time, occasionally scraping down sides of bowl.  Beat in vanilla.  Beat in half of flour mixture, then milk, then remaining flour mixture.  Spread batter evenly in prepared pan.

Bake cake until golden and tester inserted into center comes out clean, about 1 hour 15 minutes.  Cool cake in pan 10 minutes.  Cut around pan sides to loosen cake.  Turn cake out onto rack.  Turn right side up and cool completely.
