Aren't these just so pretty? These muffins were for my chocolate-lovin' friend, who just graduated from cosmetology school - I know muffins aren't all that special but these are filled with toffee and baked up in pretty liners... I bet you can't find them in your neighborhood bakery. Just my small way of saying congratulations to a friend who, without a doubt, will be going places in her new career.
I've been saving these fancy cupcake liners from The Cupcake Social for a while now - they were part of a sample pack that I received last year and though it's not necessarily my style, I knew there would be an appropriate time to use them. Oh, and on a side note, this is my 100th post! Which, I just realized while drafting this post - another reason to celebrate with pretty paper liners.
Being on a budget, these days, I try to bake as much as I can from my pantry so when I found that I was out of butter, coconut oil saved the day. And the toffee chips? They were on sale a few grocery runs ago... the perfect replacement for chocolate chips. The result is a fluffy, elegant muffin with a crisp top that makes you just want to gobble all the tops off the entire batch.
