When I saw this recipe for easy peach sorbet on Serious Eats
recently, I knew I just had to make it. The gorgeous color alone was alluring enough but the fact that it was seriously easy made it all the more appealing.
It's funny that I would even consider making a peach-flavored treat since I actually do not enjoy peachy flavored anything. I love peaches in its original form but when found in iced teas, candies, yogurt, etc. - the thought of it makes me crinkle my nose. Granted, they probably use imitation extracts in most of those products which gives it that extra "peachy" smell and taste. Frankly, it gives me a headache! I know, I'm weird...
This sorbet is naturally peachy, obviously from the fact that there are about three pounds of fresh peaches and little of anything else. Depending on the sweetness of the peaches, I may even cut out some of the sugar next time and add more lemon (or lime) juice as I found this batch to be a tad too sweet for my taste. Don't like peaches? Swap them out for your favorite in-season, juicy, summer fruit.
