I just wanted to pop in and wish everyone (that's celebrating) a Happy St. Patrick's Day! I whipped up some Irish Cheese Souffles from Clodagh McKenna's new cookbook, Clodagh's Kitchen Diaries. It was my first time making a savory souffle, and they came out fantastic! They puffed up lots in the oven, but by the time I took this photo, they had deflated a bit. No worries, it was still delicious and light! I even made it gluten free by substituting the all-purpose flour with a gluten-free flour blend.
Clodagh's cookbook follows the seasons and there are recipes for all occasions and times of the year. If you can, get your hands on a copy. I can't wait to see what spring brings!
