Orange-Scented Cream Cheese Pound Cake

Who's sick and tired of this winter? This lady, here. I'm dreaming of warmer days, soaking in the sun, looking out at a clear blue oceans and digging my toes into the hot sand. But that ain't happening anytime soon, so what's a girl to do? Bring the sunshine to me!

I'm speaking figuratively, of course. Oranges, in particular. What was I to do with a bowl of oranges sitting on the dining table? Sure, the vibrant orange is a welcome pop of color but to me, the "sunshine" is in the fragrance. Zest of citrus, rubbed into sugar has become one of my most favorite things - doing this makes for a wonderfully orange-scented cake that will warm you right up!

Orange-scented Cream Cheese Pound Cake was adapted from Joy the Baker - I left out the chocolate and baked the batter in two mini loaf pans plus 10 extra-mini paper loaf pans (see Amazon affiliate links below) for friends. Bake for about 35-45 minutes for the mini pans. 20-25 minutes for the extra mini loaves. Be advised that the extra mini cakes will not bake up with the signature split down the middle of the pound cake. 

Serve with a dollop of freshly whipped cream: add 1/2 teaspoon of almond extract and 1/2 tablespoon of sugar to 1 cup heavy cream and whip until soft peaks form.
